My Favorite Roasted Sweet Potatoes & Linkup


One of my favorite places is the kitchen.  Starting in high school, I took a pretty serious interest in cooking, and as soon as I had an apartment and my own kitchen in college, I started a food blog to document my cooking ventures.  Well food photography is really hard, and my blog eventually died, but that was my first foray into blogging and gave me the courage to start my fashion blog way back when.  I guess I've come full circle, writing about food on my fashion blog 😉.

A couple years back, my coworkers and I did a "vegetarian month" challenge, and that's when I devised this recipe.  I've made it at least once a month since then.  It's so easy, lasts well in the fridge, and makes so many dishes yummier.


Start by cubing a few sweet potatoes, tossing them in a bag with seasoning (recipe below) and enough avocado (coconut or olive will do too) oil to liberally coat them.



I often quadruple the seasoning mix and store it so these are even easier to make on the regular.


Roast them in the oven at 425* (400* convection if you've got it) for about 20-30 minutes, until they're browning on the edges, crispy, and easily pierced with a toothpick.


Then you can do all kinds of things with them!

  • Sweet potato tacos- load a warm corn tortilla with sweet potatoes, avocado slices, cotija cheese or queso fresco, and some hot sauce
  • Burrito bowls- lime cilantro rice, black beans, sweet potatoes, shredded chicken or ground beef, salsa, guac and some crushed up tortilla chips for crunch
  • On their own topped with some crumbled goat cheese, fresh cilantro, and a squeeze of lime juice
  • Quesadilla them, 'nuff said
  • Taco salad- crisp lettuce topped with corn salsa, guac, sweet potatoes, salsa, plaitain chips, cotija cheese and sour cream (I despise the stuff, but if it's your jam, more power to ya)

Mexican Roasted Sweet Potates Recipe

2 large sweet potatoes, cubed
2 Tbs avocado oil (coconut or olive works too)
1/2 tsp garlic power
1 tsp cumin
1/2 tsp chili powder
1/2 tsp Trader Joe's chili lime seasoning
(or more chili powder and some lime zest)
1/4 tsp smoked paprika
1/4 tsp chipotle chili powder
1/8 tsp white pepper
Salt + pepper to taste

Heat the oven to 425 or 400 convection.  Combine everything in a gallon ziplock bag or large bowl, and shake/stir to mix, until the potatoes are evenly coated.  Spread evenly across two baking sheets (space is vital; if you crowd them, they'll steam and not get crispy).  Bake for 20-30 minutes, rotating your pan and stirring about halfway through cook time.

Ps- a good sharp knife makes a huge difference cutting sweet potatoes and I swear by this one.  Also I love these measuring spoons because even the tablespoon fits in the mouth of small spice bottles! So handy.

  2. Yum, this sounds great! I love sweet potato and often have it roasted but don't always add anything other than salt or rosemary, I need to be more adventurous! :)

  6. Mmmmm, I love roasted sweet potatoes and make them pretty frequently - but duh, how have I never also made them into things like tacos or burrito bowls? Going on the menu soon!
