Cranberry Jalapeño Relish Over Goat Cheese




Ingredients:

  • 3 cups fresh cranberries (one standard bag)
  • Juice of 2 limes
  • 1 clove garlic, minced
  • 2 green onions, chopped
  • 1/2 cup cilantro, coarsely chopped
  • 1-2 jalapeños, seeded and minced
  • 2/3 cup sugar
  • Dash of salt
  • 8oz goat cheese (cream cheese works too)

    Necessary Tools:

    • Food Processor (I have and love this one)

      Directions:

      1. Add the sugar, lime juice, and cranberries to the food processor.  Pulse until the cranberries are roughly chopped.
      2. Add the rest of the ingredients, except the goat cheese, and pulse to combine.
      3. Transfer the relish to the fridge for at least an hour, because the cranberries need a little time with the sugar for the bitter edge to subside.
      4. Spread the goat cheese on a small platter, about 3/4" thick and top with cranberry relish.  Serve immediately with crackers or pita chips.
