Cranberry Jalapeño Relish Over Goat Cheese
Ingredients:
- 3 cups fresh cranberries (one standard bag)
- Juice of 2 limes
- 1 clove garlic, minced
- 2 green onions, chopped
- 1/2 cup cilantro, coarsely chopped
- 1-2 jalapeños, seeded and minced
- 2/3 cup sugar
- Dash of salt
- 8oz goat cheese (cream cheese works too)
Necessary Tools:
- Food Processor (I have and love this one)
Directions:
- Add the sugar, lime juice, and cranberries to the food processor. Pulse until the cranberries are roughly chopped.
- Add the rest of the ingredients, except the goat cheese, and pulse to combine.
- Transfer the relish to the fridge for at least an hour, because the cranberries need a little time with the sugar for the bitter edge to subside.
- Spread the goat cheese on a small platter, about 3/4" thick and top with cranberry relish. Serve immediately with crackers or pita chips.
