cranberry and chocolate christmas granola

Every holiday everyone makes treats, and gives you said treats.  Lots and lots of treats.  Suddenly, you have cookies and candies and pie galore (yup, I have been given whole pies).  So, this year for the holidays, I opted to make granola, because I would like to get granola.  (I don't do my Christmas shopping like that, promise!)  In case I'm just a weirdo and everyone else loves having copious amounts of treats around, this granola has some goodies in it: cranberries, white, semi-sweet, and dark chocolate, dried cherries, cinnamon, and a touch of butter and maple syrup.

3 cups rolled oats
1 cup slivered almonds
1/2 cup chopped walnuts
1/2 cup chopped pecans
3/4 cup shredded or flaked coconut
1/4 cup dark brown sugar
1/4 cup maple syrup, honey, or agave (I used a combo of all three)
2 Tbs butter, melted
1 Tbs coconut oil
3/4 teaspoon salt
1/2 tsp cinnamon
1 cup dried sweetened cranberries
1/4 cup dried cherries, chopped
1/2 cup white chocolate chips
1/4 cup semi-sweet chocolate
1/3 cup dark chocolate chips

Heat the oven to 300 degrees.

In a large bowl, combine the oats, nuts, coconut, brown sugar, and cinnamon.

In a separate bowl, combine the butter, coconut oil, and salt.  Combine both mixtures, and spread onto two cookie sheets.  Cook for about 30 minutes, stirring every 10 minutes.  Remove from oven and sprinkle over chocolate chips, cranberries, and cherries.  Allow the chocolate to melt a little, and the granola to cool.  Transfer to a large bowl and mix well.

Yields about 3 bags of granola in the size shown above.  I tripled the recipe.

The hang tag can be used as a card.  If you want to be sneaky and buy granola and just add cranberries and chocolate chips, just clip the tag in half and only use the front part.  I won't tell :)
